mmm, that all looks very yum - and so refreshing... strangely I have just this weekend rediscovered the joys of tomatoes on toast, although I have been eating little cherry toms...x
the recipe is super easy and is loosely based on fannie farmer's. i only had one and a half cucumbers, so you may want to multiply this. this was good for about 3 servings.
puree together: 1 and 1/2 cucumbers 1/2 an onion 4 cloves or so of garlic and 1/2 cup of veggie stock
in separate bowl mix: 3/4 cup sour cream 1/4 cup half and half 1 tablespoon white wine vinegar (i used white balsamic) 1/2 cup veggie stock (it's in both puree and this part) cayenne, black pepper, salt and dill
add puree to above and chill for a few hours and serve.
this recipe didn't call for it, but mint is probably also really good in it. i saw some other recipes online that included mint. yogurt could also be used instead of sour cream i bet.
